STCE cemented Long Pond as one of Memphis Rum Club's favorite distilleries, and STC⟨E as one of their favorite marques. Long Pond was founded in 1753 in Trelawny Parish, Jamaica — Hampden's neighbor and its equal in the funk tradition — and its marques are shorthand for fermentation recipes across the full ester spectrum. STCE stands for Simon Thompson Cambridge Estate: a mark created at the now-closed Cambridge distillery and carried to Long Pond, running 500 to 700 grams of esters per hectoliter — in the gap between Wedderburn and Continental Flavoured, and squarely high-ester. This 2007 STCE is molasses-based pot-still rum, fermented and distilled to the marque's specification on the John Dore double-retort still, aged at the distillery in ex-bourbon oak, and bottled with no sugar, color, or additives; check your label for the age, cask, and ABV — the Habitation Velier US release was a fifteen-year single cask at 58%. Memphis Rum Club found rotting banana, grilled pineapple, spiced red apple, jackfruit, kiwi, apricot fruit leather, model glue, and hazelnut, finishing long, spicy, and fruity with cinnamon, cola spice, and vanilla.
