The agave is seven-year blue Weber from the family's own fields, slow-cooked in brick ovens, fermented with a proprietary and wild yeast blend in open-air pine boxes, and twice distilled through copper and stainless alembic stills. Still Strength is the Blanco exactly as it came off the still: no water added, no dilution, bottled at 101 proof (50.5% ABV) after resting in stainless steel.
